Ingredients:

1 pound pork shoulder, trimmed and cut into 1-inch cubes
2 tablespoons lard or vegetable oil
1 onion, finely chopped
3 cloves garlic, finely chopped
1 tablespoon chili powder
1 teaspoon cumin seeds, toasted and ground
1 teaspoon dried oregano
1/2 teaspoon salt
Freshly ground black pepper to taste
2 cups chicken broth or water
2 cups masa harina
1/2 cup (or more) lard or melted butter, for steaming the tamales

Instructions:

Place the pork shoulder cubes in a large pot and cover with water. Bring to a boil over medium heat and simmer for 30 minutes. Remove the pork from the pot with a slotted spoon and set aside.

In the same pot, heat the lard or oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the chili powder, cumin seeds, oregano, salt, and black pepper. Add the chicken broth or water and simmer for 10 minutes.

Meanwhile, place the masa harina in a large bowl. Slowly add 2 cups of the broth mixture to the masa harina while whisking constantly until you have a smooth batter. Set aside.
